Step By Step Instructions

How To Make Curry Sauce
  • Heat the vegetable oil in a large skillet or saucepan over medium heat.
  • Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Add the minced garlic and ginger. Sauté for an additional 1-2 minutes until fragrant.
  • Add the curry powder, turmeric, paprika (if using), and cayenne pepper. Stir well to coat the onions and spices with the oil. Cook for about 1-2 minutes to toast the spices and enhance their flavors.
  • Pour in the diced tomatoes (with their juices) and cook for another 3-4 minutes, allowing the mixture to simmer and thicken.
  • Add the vegetable or chicken broth to the pan and bring the mixture to a gentle boil. 
  • Reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld.
  • Use an immersion blender or transfer the mixture to a regular blender (careful, it’s hot!) and blend until smooth. If using a regular blender, return the mixture to the pan afterward.
  • Stir in the coconut milk, and season with salt and pepper to taste. Add sugar or honey if desired to balance the flavors.
  • Simmer the sauce for an additional 5-10 minutes, allowing it to thicken and develop a rich consistency.
  • Taste and adjust the seasonings, adding more spices or salt as needed.
  • Your curry sauce is now ready to be used in various curry dishes! You can add cooked vegetables, meats, or legumes to create your desired curry.
